Caramel Apple Vegan Waffles
We had breakfast for dinner the other night. My boys like waffles and so every so often I will make them and then dress them up so they are extra special. I sautéed apples in a little olive oil with some cinnamon and browned and then added a few tablespoons of my Vegan Carmel Sauce to make them extra good. We sprinkled the top with finely chopped pecans.
I will admit that I used a mix for the waffles. I use a lot of great mixes to get food on the table fast for my family. For these waffles I used Namaste brand and I increased the liquid to 1 cup and used 4 tablespoons of aquafaba in place of the eggs. Aquafaba is the liquid that you drain off the cans of chickpeas – that liquid is magical if you do not eat eggs. It whips up nice and frothy and can be used in a number of dishes as a great substitution.

- 2-3 cups diced apples use your favorites or a ixture of types
- 1 teaspoon cinnamon
- 1/4 cup Vegan Caramel Sauce
- 1 teaspoon salt - optional
- 2 cups Waffle Mix - Namaste Brand used
- 1 cup unsweeted almond mild
- 2 tablespoons olive oil
- 4 tablespoons aquafaba the liquid you drain off the cans of chickpeas
- 1 dash cinnamon
- 1 teaspoon vanilla
- 4 tablespoons chopped pecans - optional

- Add Olive oil and diced apples to the pan to brown
- Once the apples are just about cooked mix in the Caramel Sauce, add a dash of salt if needed and set aside
- In a Big bowel add the aquafaba and mix with a whisk to get it frothy. Once frothy add in the milk, olive oil, cinnamon and vanilla.
- Add the mix to the wet ingredients and stir until you have a thick batter.
- Cook about 2-3 tablespoons at a time on each square of the waffle maker until crispy. Repeat until all batter has been cooked
- To Plate take 2 waffles and top with a few spoonful's of the caramel apple mixture. Sprinkle with pecans and Enjoy!
