Easy Vegan Rice Crispy Bars
My boys love rice crispy treats. Having a child with Celiac means that we can’t eat the ones from the store due to the malt barley in the ingredient list. They also contain butter and since dairy is very limited in our house we make our own. This is my short cut version made in under 10 minuets – well closer to 5 minutes. Brown Rice cereal, rice marshmallow cream & mini vegan marshmallows – chill to set and you are ready to go. Today I topped with some shamrock sprinkles for St. Paddy’s days. These are also great with some mini chocolate chips, nuts or shredded coconut mixed in. Hope you enjoy as much as we do. This can be easily doubled.

Ingredients
- 1/2 box Brown Rice Cereal (about 5 oz)
- 1 jar RiceMellow Cream found at online and at Whole Foods
- 1/2 bag Vegan Mini Marshmallows I like trader Joes Brand
- optional mini chocolate chips, nuts, or coconut

Instructions
- Prep a 1/2 sheet pan or casserole dish by lining it with saran wrap.
- In a large bowl add 1/2 a box of the Brown Rice Crisps.
- To that add 1/2 a bag if the mini marshmallows. If adding any of the other add in's - add here.
- Then add the entire container of Rice Mellow Cream and stir until everything is combines - it will look like it is not coming together but be patient - it will.
- Pour into the prepared dish, press to compact the bars and chill for at least 30 minutes.
- Cut into bars. Enjoy!
