Vegan Caramel Sauce

Homemade vegan caramel – yum!

I love caramel sauce. On ice cream, in coffee, on waffles or just a big spoonful of it – YUM!  It is one of my favorite things in life and I always have it on hand. Before going dairy free I kept the salted caramel sauce from Trader Joe’s in  my pantry. Now I make my own that is dairy free and just as delicious.  I am sure you will want to try this too!

  1. This is a super easy and 3 ingredient recipe. Not pictured is the bourbon - Knob Hill is great in this.
  2. Refrigerate the can of coconut cream overnight and drain off the liquid keeping only the cream part for this reciepe. You can use the coconut water in you smoothie for breakfast.
  3. In a sauce pan over medium heat add the cup of coconut sugar and the shot of bourbon. Once the sugar starts to melt down add the coconut cream.
  4. Continue to cook at a low boil stiring occasionally until the caramel coats the back of a spoon and you can run your finger through it. About 20-40 minutes. If you like that Salted Caramel flavor - add a little course salt here.
  5. Jar this up and be patient as it is better once it cools and gets thick and creamy!

Notes

  • Vegan Caramel Sauce

    You can use any sugar you like for this or a combination of dark and brown. I have found the best is light brown sugar or coconut sugar.
    Bourbon is optional - it is very good with a tablespoon of vanilla in place of the bourbon.
